Is all this talk of tequila making you thirsty? It’s my tribute to one of the best weekends of my life, and my favorite fun place (Disney, not the bar!) to spend my days off work. It’s made with fresh cucumber and pineapple, and is a total delight to drink any day of the week. La Cava has an amazing selection of tequila, but their unique margarita menu is where they really shine! And is the inspiration behind this margarita – it’s a combination of the ones that my bloggy bestie, Amber of Slim Pickin’s Kitchen, and I drank while at the Food Blog Forum back in February. This, my friends, is one of the reasons why adults looooove Epcot. When you look to your right as you come down the ramp leading to this exciting place, you’ll see a small storefront, set inside the façade of a lovely building, called La Cava del Tequila. It’s absolutely gorgeous, and it’s so easy to lose yourself in the fantasy of really being there. When you walk in to the towering Aztec temple, you are bombarded with a glimpse of life in a bustling Mexican marketplace at twilight, complete with kiosks selling sombreros and ponchos, hand-painted ceramic animals & vases, and an active volcano quietly erupting in the distance. Epcot is my favorite place to go now that I’m all grown up, and the Mexico Pavilion in the World Showcase hides a wonderful little secret.

Yesterday was an excuse for America to get drunk for no good reason, and I suppose, in some small way, I helped contribute to the madness.
When I come at you with alcohol, I really come at you hard, don’t I? A refreshingly cool, smooth margarita, made with fresh lime, cucumber and pineapple, and pureed with your favorite tequila.
